🐛 Interactions break on versions below 1.21.5

🗣️ Describe the bug

Animated Java attempts to add the data.animated_java.on_(attack|interact)_function nbt to an interaction entity (in the aj:namespace/zzz/summon/as_interaction/interaction function), which breaks as interaction entities can't have the data nbt on versions below 1.21.5
