Customizable stops and manuals

Will it ever be possible to rename the manuals and control what stops correspond to each manual (and maybe even rename the stops)?

This is already possible with a custom organ config file. You can create a custom configuration and rename all the manuals and stops. A config file is an editable JSON, please see here for the details.
