OpenMM can't write OpenFF topologies; OpenFF can't write .mmcif files

Trying to write out a pdb/mmCif file of a simulation initialised using OpenFF results in a bunch of residues marked 'UNK'. You can write a topology from the interchange, but openff will only write pdbs, alongside various MD-specific formats, not mmCif.
