Update livekit-server Helm chart to appVersion 1.9.12 (current server release)

The official LiveKit server has released up to v1.9.12 (March 2026), but the livekit-server Helm chart in this repo is still packaging v1.9.0 (or even v1.8.3 per Chart.yaml on master).

When searching/installing via helm repo add livekit https://charts.livekit.io and helm search repo livekit/livekit-server, I can only see 1.9.0 as latest available, creating confusion and forcing manual image overrides.

WORKAROUND:

If you add tag: v1.9.12 to your values file you can use the latest version.

Although sometimes chart versions align with app versions, it doesn't always have to be the case.

Example using latest values.yml file:
