Replace minio as suggested S3 solution #1727

Feature Request
The docs currently recommend minio as suggested S3-compatible storage solution, however, minio recently went into maintenance mode (with a push to their proprietary offering) and should probably not be recommended anymore.
There are several alternative open-source solutions that provide S3-compatible storage:
- Versity S3 Gateway: https://github.com/versity/versitygw
- SeaweedFS: https://github.com/seaweedfs/seaweedfs
- Garage: https://github.com/deuxfleurs-org/garage
- rustfs: https://github.com/rustfs/rustfs
I'm currently trying out Versity with Docs and will be happy to report back how that goes.
