chore: 0.12.2 release preparation

• Updated the docs to mention that we uv now instead of poetry.
• Remove outdated/unnecessary documentation files.
• Added examples/sink/all_sinks in the build and push CI since it includes a pipeline.yaml file referencing the same image from quay.io
