We probably should make these configurable with sensible defaults.
I'll approve this PR so we can get it working again, and create an issue to change this to use the envvars if set.

Modify PYTHTEST_CONFORMANCE_ENDPOINT and PYTHTEST_CROSSCHAIN_ENDPOINT variables so that https://api2.pythnet.pyth.network can be used instead of https://api.pythnet.pyth.network by the python client
