I have found that if I ask "How do you use source control?" I often get a quick response like "We use Git and GitHub/Bitbucket/GitLab Cloud". A follow-up question about the branching strategy prompts the interviewer to go into more detail. This gives a better sense of how rigorous the standards are and how the team works.
